Grape variety: 100% nebbiolo

Production zone: Castiglione Falletto, Vignolo MGA, southwest exposed,

220 - 265 m.a.s.l.

Soil: typical marls of Sant’Agata Fossils.

Surface: about 0,2 hectare.

Harvest: hand-picked with grape selection into baskets towards mid-October.

Vinification: selection of the grapes on a vibrating table, light crushing, fermentation
in steel tanks at a controlled temperature.
Maceration for about 20 days.

Ageing: about 40 months in traditional oak barrels and then in the bottles in
underground cellar with controlled temperature until it is put up for sale.

Tasting: the color is a deep red with shades ranging from soft ruby to garnet. The aroma is complex, with notes of undergrowth and red sandalwood. It is pleasantly fruity, with hints of red currant and Sicilian orange. The spiciness is delicate, featuring pink pepper and cinnamon. Subtle hints of cinchona and violet emerge as well. On the palate, it is elegant and enveloping. The silky tannins make each sip long and persistent.

A pleasant freshness adds great intensity to the aftertaste.

Food pairing: the wine displays elegance, freshness, and silky tannins, making it ideal to pair with flavorful dishes that have a slight fattiness and good succulence: ossobuco with Milanese risotto, tajarin with chicken livers, lamb sweetbreads, king oyster mushrooms and pecorino, beef pastrami, Piedmontese fattened beef rib steak, and roasted late-harvest radicchio.

Serving Temperature: 16-18°C (61–64°F).

Storage: horizontally in places with constant temperature, if possible.
Ready to drink and can be cellared for 15 - 20 years.
